Perfect Chia Berry Paleo Parfait

This paleo, gluten-free recipe is super fast and easy to make!

Ingredients:

1/8 cup chia seeds
1/2 cup almond or coconut milk
1 tablespoon organic raw honey or organic maple syrup
1 teaspoon vanilla extract
1/2 cup granola
3/4 cup mixed berries (strawberries, raspberries and blueberries work well)

Instructions:

In a small bowl, add in the chia seeds, milk, sweetener, and vanilla extract. Stir to combine the ingredients. Place in the refrigerator and let it set overnight. In the morning, the chia seeds should have gelled. To make the parfait, layer a glass or bowl firstly with a portion of the chia mixture, then some of the granola, then some of the berries. Repeat for however many layers you would like.
