This reminds me of banana pancakes, gluten free, (but not paleo)
Two ingredients:
a very ripe banana and 1 egg blended together until smooth and pourable.
Cook in a skillet until brown and firm, like any other pancake.

And that’s true, thanks for reminding me that for some “hard-core” paleo enthusiasts, starchier fruits like bananas are avoided. But most paleo peeps enjoy bananas enthusiastically. I think bananas are just great though. Full of fiber, it’s amazing at breakfast or as a snack.
